COMMI 1 – Senior Commis (Experienced Level)

Role:

Supports Chef de Partie; handles cooking independently with minimal supervision.

Responsibilities:

Prepare, cook, and present dishes as per standards

Manage a specific section (hot kitchen, cold kitchen, bakery, etc.)

Train and guide Commi 2 & Commi 3

Ensure food quality, taste, and portion control

Maintain hygiene and cleanliness of work area (HACCP standards)

Check inventories, assist with stock ordering

Handle opening & closing duties of the kitchen section

Ensure timely service during busy operations

????️ COMMI 2 – Mid-Level Commis (Semi-Experienced)

Role:

Assists Commi 1; handles basic cooking and preparation tasks.

Responsibilities:

Assist in food preparation (cutting, marination, portioning)

Cook simple dishes under guidance

Prepare mise-en-place for the section

Follow recipes and instructions given by CDP/Commi 1

Maintain cleanliness and proper storage

Ensure ingredients are fresh and properly labeled

Support during service and peak hours

Learn and upgrade skills for promotion to Commi 1

????️ COMMI 3 – Junior Commis (Entry Level)

Role:

Beginner-level; mainly focuses on basic prep work.

Responsibilities:

Basic cutting, chopping, cleaning ingredients

Assist in preparing mise-en-place

Wash, clean, and maintain utensils/equipment used

Keep workstations clean and organized

Support Commi 1 & Commi 2 with simple tasks

Follow kitchen safety and hygiene rules

Learn cooking methods, recipes, and procedures

Help in storing deliveries and organizing stock
