Job Summary:
As a Sushi Roller you will be responsible for crafting high-quality sushi and other Japanese culinary delights with precision and creativity. Your expertise in sushi rolling techniques, attention to detail, and passion for creating visually appealing and delectable dishes will be essential in providing an exceptional dining experience for our valued customers. This role requires proficiency in sushi preparation, adherence to food safety standards, and collaboration with the kitchen team to maintain the highest level of culinary excellence.
Responsibilities:
Sushi Preparation:
• Prepare a variety of sushi rolls, nigiri, sashimi, and other sushi dishes following the restaurant’s recipes and standards.
• Use fresh and high-quality ingredients to ensure the best flavor and presentation.
• Safely handle and store raw fish and other ingredients in compliance with food safety regulations.
Sushi Rolling and Presentation:
• Utilize expert sushi rolling techniques to create visually appealing and well-constructed sushi rolls.
• Pay close attention to detail to maintain consistent shape, size, and appearance of sushi dishes.
• Arrange sushi on plates or platters in an attractive and artistic manner.
Fish Cutting Speed:
• Demonstrate efficient and skilled fish cutting techniques to maintain productivity during sushi preparation.
• Work swiftly without compromising on the quality and consistency of fish cuts.
Quality Control:
• Conduct quality checks on all sushi dishes to ensure they meet the restaurant’s standards for taste, texture, and presentation.
• Address any issues with sushi quality or presentation promptly to maintain excellence.
Fish Yield & Portioning:
• Optimize fish yield and portioning to minimize waste and maximize the use of ingredients.
• Ensure portion sizes meet the restaurant’s standards for each sushi dish.
Food Safety & Hygiene Knowledge:
• Comply with all food safety and hygiene regulations to ensure safe handling of food items.
• Follow proper handwashing, sanitation, and cleaning procedures in accordance with health and safety standards.
Collaboration and Communication:
• Work closely with the kitchen team to coordinate sushi preparation and ensure timely service during busy periods.
• Communicate effectively with other kitchen staff and servers to ensure smooth operations.
Menu Knowledge:
• Stay updated with the restaurant’s menu and any changes or additions to sushi offerings.
• Be prepared to answer customer inquiries about sushi ingredients and preparation methods.
Creativity:
• Showcase creativity and innovation in designing new sushi rolls or introducing unique flavor combinations while respecting traditional Japanese techniques.
Inventory Management:
• Assist in monitoring and managing sushi ingredient inventory levels to ensure availability and freshness.
Rolling Speed:
• Display a high level of sushi rolling speed while maintaining the precision and visual appeal of the sushi rolls.
• Keep up with the demands of a busy kitchen to ensure timely service.
Station Rotation:
• Participate in station rotation within the sushi preparation area to gain proficiency in various sushi stations.
• Assist in other kitchen areas when required to support the overall kitchen operations.
Recipes Implementation:
• Accurately follow sushi recipes and preparation guidelines provided by the restaurant.
• Consistently deliver sushi dishes that meet the established taste and presentation standards.
Kitchen Forms:
• Complete kitchen forms, such as inventory requisitions, temperature logs, and production sheets, as needed.
• Maintain organized and up-to-date records to facilitate smooth kitchen operations.
Backup Preparation:
• Anticipate potential rushes or increased demand and prepare backup ingredients to avoid delays in service.
• Ensure that all required sushi ingredients are readily available and prepared in advance.
Qualifications:
• Sushi Expertise: Demonstrated proficiency in sushi rolling techniques and familiarity with various types of sushi dishes.
• Culinary Experience: Previous experience as a Sushi Roller or in a sushi-focused kitchen is preferred.
• Food Safety Knowledge: Understanding of food safety practices and proper handling of raw fish and sushi ingredients.
• Attention to Detail: Meticulous and precise in sushi rolling and presentation.
• Creativity: Ability to bring artistic flair and creativity to sushi designs and flavor combinations.
• Team Player: Strong collaboration and communication skills to work effectively with the kitchen team.
• Physical Stamina: Able to stand for extended periods and lift moderate weights.
• Flexibility: Willingness to work evenings, weekends, and holidays based on restaurant needs.
