Key Responsibilities
1. Culinary Execution & Creativity
Menu Development: Design innovative dessert menus that complement the main courses and reflect seasonal ingredients.
Production: Prepare a wide range of items including cakes, cookies, pies, tarts, chocolates, bakeshop breads, and frozen desserts (gelatos/sorbets).
Plating & Presentation: Ensure every dessert leaving the kitchen meets high aesthetic standards—think of it as the “final impression” for the guest.
Science of Baking: Maintain strict adherence to recipes, as pastry requires exact measurements and temperatures to ensure chemical reactions (like leavening) occur correctly.
2. Kitchen Management
Inventory Control: Order specialty ingredients (high-quality chocolate, vanilla beans, etc.) and manage stock to minimize waste.
Food Safety: Maintain a clinical level of cleanliness. Pastry often involves temperature-sensitive ingredients like dairy and eggs.
Equipment Care: Oversee the maintenance of specialized tools like deck ovens, proofers, and stand mixers.
